Programme Content
The Maître D Programme Certificate comprises five integrated courses that together build a well‑rounded foundation in hospitality service and professionalism.
Participants begin by exploring the World of Beverages, developing an understanding of beverage history, production methods, flavour profiles, and emerging trends across both alcoholic and non‑alcoholic offerings. This course also introduces learners to the origins of tea and coffee, regional influences, and distinctions within beverage categories.
Through Bar Service, participants gain insight into cocktail culture, bar operations, hygiene standards, equipment use, and bartender responsibilities, while also examining trends in beverage service and presentation.
The Fine Dining Service component focuses on refined service techniques, including restaurant layouts, table settings, carrying methods, service styles, wine decanting, and upselling strategies that enhance the guest experience.
In Terroir Influences and Celebrating Cuisines, participants explore how geography, tradition, and culture shape food and beverage experiences. Learners examine the terroir of wines and cheeses, the history of celebratory cuisines, and evolving dietary preferences and lifestyles.
The programme concludes with Managing Conflict, equipping participants with practical tools to recognise sources of conflict, interpret body language, apply conflict‑management principles, and handle challenging situations effectively within hospitality environments.
